O'Chatten Smokery is Northern Ireland's only commercial smokery.
Andrew Chatten, owner at O'Chatten Smokery, met with members of the Trust on his premises at Bluestone Business Park to explain what his daily work routine entails. The company's focus is solely on producing artisan bespoke products such as Lough Neagh eels, pastrami, pancetta and smoked duck breast fillets.
With the financial help of the JWMT, Andrew was able to develop and create another smoker to speed up the production line. He is extremely passionate about his work and is continually meeting with local chefs and food buying groups for advice.
Andrew has big plans for the future. He has already stocked his products on the shelves of Fortnum and Mason and plans to have them in many other high-end food stores. Currently he employs over five members of staff and his turnover in the first year trading was in excess of £250,000.
